This may be silly because it's from Chapter 2, but...
Pg. 61: Where is the data for this page?
Pg. 63: Why did we change the value from 21 to 1 in this example if it was a common typographical data entry error?

The data for page 61 is unnecessary because it is an example.
On page 63, I believe the value was changed by the authors to one demonstrate how to find outliers on the histograms. The "typographical error" is given as a scenario where a value of 21 might indeed be changed to 1, unintentionally. Bottom line: you can find outliers that might result from typographical errors on histograms as well as by looking at how many standard deviations away from the mean a data point is.
When calculating error, it is the within groups or within subjects that is used. You can also find this in the slides.
